Lissadell Bloody Mary Oysters.
Ingredients :
(14 1/2 ounces) diced cooked tomatoes
1/4 cup vodka
4 dashes hot sauce, such as Tabasco
1/2 cup plus 2 tablespoons fresh lemon juice
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon freshly ground white pepper
1/4 teaspoon Worcestershire sauce
1 dozen fresh oysters, scrubbed
Fresh horseradish, shaved, for garnish
Celery leaves, for garnish.
These Oysters are farmed on the Shores of the west coast of Ireland in Co. Sligo.
(They have being grown at Lissadell since 1860 .Production of Gigas oysters is for the home and export markets .
They have their own Hatchery at Lissadell and spat is taken into the nursery in spring and nursed on for 1 year to 8mm – 15mm when it is placed on an on growing bag and trestle system for a further 2 years until oysters reach a size of 70- 100 grams and are ready for consumption .They filter feed the microscopic plants and animals that naturally bloom in estuarine waters around Ireland and are a completely natural organic product ).
