Spring Salad with Green Warrior | Food Photography Ireland
Spring how are you doing? You are looking well. Spring is one of my favourite times of the year, one can only get giddy at the thought of new life and better weather. Myself and Green Warrior took a trip around the North West to gather the finest ingredients for this tasty spring salad. We collected some salad leaves from the Organic Centre, Rossinver, Co. Leitrim. We wanted to stay true to the crisp freshness of the leaves and so a simple salad dressing was perfect.
Using Local Knocknarea honey and fresh organic french style purple garlic from Gurteen. The use of the salad leaves combined with the intensity of the raw garlic and flowery honey makes this the ideal salad to start welcoming Spring foods back into your diet.
Ingredients:
1 bag of The Organic Centre Salad Leaves Edible Flowers (nasturtium, marigold) Fresh mint leaves Spring Onions Cucumber
Dressing:
60ml extra virgin olive oil 1 teaspoons Balsamic vinegar or white wine vinegar 1 teaspoon honey 1 clove garlic, crushed 1/2 teaspoon Dijon mustard Sprinkle of freshly ground pepper and Pinch of Irish sea salt
Combine all of the dressing ingredients in a jar and shake it up. Slice the cucumber and spring onions. Pick the mint leaves from their stalks. Tear the salad leaves into bite sized pieces Once you are ready to eat, dress the salad leaves. Sprinkle with edible flowers Serve Immediately.
